Tequila is a spirit that originated in Mexico made from distilled blue agave. Agave is a succulent characterised by the presence of agavins, mainly fructose, which makes it suitable for distillation.
Blue agave grows well in the red volcanic soils of Mexico. When grown in the highlands it is characterised by by sweeter aromas and flavours, whereas blue agave grown in the lowlands is spicier and more herbaceous in flavour.
There are 4 styles of Tequila based on the ageing process used to produce them.
Blanco: Aged for less than 2 months before bottling. Reposado: Aged for a minimum of 2 months and maximum of 1 year in oak barrels. Anejo: Aged for a minimum of 1 year and maximum of 3 years in small barrels. Extra Anejo: Aged for a minimum of 3 years in oak barrels.
