Succulent pet nat from Sassafras. There's plenty of flavour backed by some balanced acidity and an amazingly soft and rounded bead. Delicious and difficult to put down... I guess that's all you want out of pet nat, right? - Chris L
The fruit for this wine came from the Quarry Hill vineyard site at Murrumbateman in the Canberra District. Spur pruned vines grafted onto devigorating rootstock. Very low yields have built some concentration and weight into the fruit. Picked on fruit flavour, not acid, the fruit was given a whole bunch press with a little sulfur, the juice briefly settled then racked to tank for ferment. Bright, with white pear and candied lemon. A long, sapid trail of flavour with a hint of phenolic chew. - Distributor Note
