Winemaker Jean-Francois Bordet is the latest in a long line of family vignerons, dating back to 1590. Based in the Chablis village of Maligny, the estate comprises 14 hectares of Petit Chablis, Chablis Villages, and the 1er Cru of Fourchaumes. In addition, Jean-Francois also purchases fruit from his neighbours in the 1er Cru of Vaillons, and Grand Cru of Vaudesir - all grown organically.

Having taken over from his Grandfather, Roger Seguinot, Jean-Francois brings a contemporary approach to the Domaine, whilst still maintaining the traditions of Chablis. Nearly all of their holdings are on the right bank of the Serein river, with a perfect South / South-East aspect, and grown in the fossil-rich soils of the Kimmeridgian sea bed. The vines are tended organically, with everything hand-harvested, emphasising the role that nature plays in producing the wines.

In the winery, Jean-Francois utilises longer ferments at cooler temperatures, to allow the layers of complexity and depth to develop. He leaves the wines on their lees for 6 months with regular battonage to build in texture and richness. Vinified entirely in stainless steel, his contemporary approach results in stylish wines that fully express both the fruit and the Chablis terroir.
