For evenings like these, I love reaching for a Sangiovese—light enough to complement the meal, yet full of flavour to make an ordinary weeknight feel just that little more special.

This Week's Recipe:
Creamy Mushroom & Thyme Tagliatelle
Serves 2
Ingredients:
• 250g fresh tagliatelle
• 300g mixed mushrooms, sliced
• 2 cloves garlic, crushed
• 1 tbsp olive oil
• 2 tsp fresh thyme leaves
• ½ cup cooking cream
• ¼ cup grated Parmesan
• Sea salt & cracked pepper
• Fresh parsley to serve
Method:
Cook the pasta until al dente. Meanwhile, sauté the mushrooms in olive oil until golden. Add garlic and thyme, then stir through the cream and Parmesan until smooth. Toss through the cooked pasta, season to taste and finish with fresh parsley.
