Amontillado is a Fino or Manzanilla that has been aged for a longer period of time without the cover of a flor. A cask becomes Amontillado if the flor yeast fails to build a healthy and full culture, but mostly due to winemaker intervention. Amontillado's are dry and light brown in colour with moderate richness and body. Flavours similar to that of a Fino are seen, yet the palate is more structured and intense.
