Champagne! Just the word gets everyone excited.

Champagne is a sparkling wine region in France. It is located about 100km east of Paris around the townships of Epernay, Reims and Troyes. The wine growing region is segregated into 5 sub-regions: Cote des Blancs, Montagne de Reims, Cotes des Sezanne, Vallee de la Marne and the Aube.

Champagne is produced using the local method: Methode Champenoise. This method involves the fermentation of grape juice to wine. Once it is wine it undergoes a secondary fermentation in bottle which creates the bubbles. Once this secondary fermentation is complete a deposit of yeast lees (dead yeast) forms in the bottle. The Champagne is then aged for a minimum of 1.5 years on these lees during which the bottles are riddled and then disgorged, expelling the lees from the bottle. In most cases a dosage, or sugar, is added to the bottle before the final cork is inserted.

If you want to make the most of each sip, avoid chilling your champagne for too long. Bringing it down to a temperature between 5 and 7 degrees Celsius is advisable. From there, make sure you choose the right type of glass. An elegant flute will do. Fill it to the top and quaff your bubbles as though you’re enjoying a day at the races.
