This week I've selected a fresh Aussie take on a classic Portuguese red grape - Touriga Nacional. This Touriga with a sprinkling of Cabernet Sauvignon and Cabernet Franc shows delicate dark fruits, purple floral characteristics and a nice brininess that is backed up with great acid and liveliness on the palate. This wine will have you covered for most red meat based dishes, pasta or pizza. This particular wine is also being discontinued so this is your last chance to try this wine - don't wait!

THE OCCASION EDIT: PINOTS TO CELLAR
Cellaring Pinot Noir can be tricky - they often don't need as much time as big reds and are usually very drinkable on release.
Five years covers a lot of Pinot Noir and the serious bottles will happily go ten or more, though it really depends on what is in front of you. A reginal level Burgundy or an early picked Australian Pinot is often at its best young. Something off an older vineyard with proper structure behind it will take far longer to unwind.
The vintage is also important - a cooler vintage might need more time to unfurl in the cellar due to high acid and often subdued flavours on release, whereas a riper vintage can be more generous on release but can just as easily age as it has the concentration, tannin and often oak to provide a strong backbone.
The reason Pinot comes around sooner than Nebbiolo or Cabernet is tannin. There is simply less of it to soften, so age does something different here. The fruit slowly turns savoury and earthy and the perfume gets more complicated, and that is the part actually worth waiting for.
I've selected some wines here that will definitely improve with time in the cellar. Some of these will only need a few more years to be in its peak drinking window, some will easily cruise for 10-20+ years. This is your chance to start getting serious about cellaring and reap the rewards in the future, or pull out some bottles you've already put away!
