How good is aged Sauvignon!!! If you don't know you should do yourself a favour and try a bottle of this. Pouilly Fume is the richer sister to Sancerre, and by rich I mean richer in body - this is why their ageing potential is so good. There is nothing green, nor sharp about this wine. It's more decadent and concentrated, which is more reminiscent of Chardonnay without the oak. Honeysuckle and butterscotch flavours have developed from time in bottle as well as added viscosity on the palate. It is a truly delicious drink and a unique experience everyone should enjoy!
