PRODUCER PROFILE: ELANTO

Elanto started as a venture between Sandro Mosele and Tony Todaro who met at a French wine tasting and instantly connected. They were both interested in working with a high-density vineyard with an easterly aspect and well-drained soils conducive to deep roots. They found this wonderful site in Balnarring with a southeast aspect and volcanic soils and with the help of French soil scientist - Claude Bourguignon, were convinced of the potential of this site to produce spectacular, distinctive wines.

The high-density planting has helped to produce some incredible wines despite the young vine age. High-density increases the competition for nutrients, water and sunlight and reduces the yield per vine, concentrating the vine's resources on fewer bunches. Reduced yields often result in more intense and complex flavours and help to ensure consistent quality across vintages. In regards to the farming, they promote organic matter and biological activity using mulch and compost and by sowing seed in the mid rows. Herbicides are never used and with timely cultivation they control the weeds, aerate the soil and incorporate organic matter, enhancing microbial activity and nutrient cycling.

We've supported Elanto since their first release and we're thrilled to stock their new lieu-dit Pinots now as well. Firstly, we have some of the '24 'Chardonnay' which is already one of Australia's great Chardonnays and also available in magnum. The '24 'Pinot Noir' is looking better every time we taste it - dark and savoury. The '24 'Ironstone Pinot Noir' comes from their lowest yielding plot and shows incredible detail, structure and a nice ferrous edge whereas the '24 'Basalt Pinot Noir' shows more spice and minerality. These are some very special wines that should be on the radar of anyone who loves Australian wine or high-quality Burgundian varietals. Pick these up!

DISCOVERY POUR: ORI MARANI ANUKA WHITE

Georgia is best known for their eccentric orange wines but they can produce some pretty fantastic white wines as well. Ori Marani combines both Georgian and western winemaking sensitivities in order to express the best of the Georgian terroir. This wine is fermented and aged in Qvevri and old French oak barrels with its indigenous yeast without any additives, with the exception of a small amount of sulphur. This is fresh with layers of interesting fruit characters, herbal and a saline mineral edge. An extremely unique wine - discover what Georgia has to offer outside of their orange wines!

Jacques Lassaigne

We've got our yearly allocation of this cult Champagne producer's wines in stock. Jacques Lassaigne is a renowned artisanal grower-producer located in Montgueux in the southern Aube department. Established in the 1960s, the estate produces exceptional, terroir-driven Blanc de Blancs under the guidance of Jacques's son, Emmanuel "Manu" Lassaigne. The vineyards are farmed organically with some biodynamics to help highlight their
chalky clay-marl soils. Only a small amount to go around - snap these up!

Join us this Saturday as we taste through the exciting minimal intervention wines of Della Staffa from Umbria!

After working with some of Italy's most respected low-intervention estates, Danilo Marcucci revived his wife Alessandra's historic family property, Conestabile della Staffa, near Lake Trasimeno in Umbria. The estate's 12 hectares of vineyards, many planted in the 1970s and some significantly older, are farmed organically on clay-limestone soils at 250-350 metres elevation. Fermentations are spontaneous, cellar work is intentionally minimal, and the wines are crafted to express site, variety and vintage without artifice. The result is a collection of beautifully pure, vibrant wines that combine the authenticity of natural winemaking with the pedigree and history of one of Umbria's oldest wine estates.

These are the wines that we'll be pouring on the day: Grechetto, Trebbiano, Liatiko, Pino and Il Rosso Sangiovese.
