Nestled in a small house amid the vineyards of Savigny-lès-Beaune, Domaine Guilbert Gillet represents a new wave of thoughtful Burgundian craftsmanship. With just 3.6 hectares (including 0.5 ha of whites), the estate practices organic, parcel-focused viticulture, even cultivating select vines by hand and horse-plow to honor tradition and terroir.
Benjamin, enriched by a formal oenology education and formative experiences in top estates, applies time-honored winemaking techniques—whole destemming, long maceration, traditional pressing, barrel aging without racking, and lunar-phase gravity bottling—to craft wines of elegance and precision.
Already, the domaine’s portfolio has expanded rapidly—from five original cuvées in 2020 to 18 unique bottlings by 2022—including experimental cuvées comparing vine age in 1er Cru Peuillets. Frequently scoring in the low 90s, these wines are praised for their purity, aromatic layering, and terroir clarity—making Domaine Guilbert Gillet one to watch in Burgundy’s evolving landscape.
