In 2015, founders Nick and Ally asked themselves a question many of us ponder: “If you could do anything for a living, what would it be?” Over a whisky, Ally voiced the thought that would change their lives: “Someone out there makes what we’re drinking for a living.”

That spark set them on a journey across Australia and around the world, learning the art and science of distilling while laying the groundwork for what would become Karu Distillery. Three years later, in 2018, their vision took shape with the release of their very first spirit—Affinity Gin. Launched through a subscription service, the debut batch of 300 bottles sold out nationwide, marking the beginning of their story in spirits.

Driven by a relentless commitment to quality, Ally honed her craft as a self-taught distiller, earning recognition for her expertise and uncompromising standards. Nick drew on his creative background in the film industry, bringing a fresh perspective to strategy, product development, and operations—turning ambitious ideas into reality and building strong connections along the way.
