Tasting Notes
Blanc de Blanc from Xarel-lo and Macabeu from old, mountain vineyards in Muntanyes d’Ordal that sit on deep marine-limestone. Zero dosage, minimal sulphur, the base wine was left on lees for 12 months followed by another 18 months en-triage before final disgorgement. Complex, yet incredibly fine and elegant. Oyster shell, chalk and high acidity recall the more mineral driven styles of grower Champagne. - Importer Note
