Mezcal is a Mexican spirit made from any type of agave. It differs from Tequila, which is made solely from blue agave. Agave is rich in fructose (sugar) which is fermented and then distilled to produce Mezcal.
There are 3 categories of quality Mezcal. Blanco Mezcal is clear in colour and unaged. Reposado is aged for 2-9 months in wooden barrelss. Anejo is aged for a minimum of 1 year in wooden barrels, with the best exampled usually aged for up to 3 years.
Mezcal is typified by a smoky flavour created when the agave is cooked prior to fermentation and distillation.
