Collection: Pascal Lambert

Pascal Lambert is based in Cravant-les-Côteaux in Chinon, where he has been making wine since the early 1980s. What began with a small parcel of vines has grown into an estate of around 18 hectares, farmed organically and biodynamically across the varied limestone, clay and gravel soils of the appellation. Cabernet Franc is naturally at the heart of the domaine, alongside a small amount of Chenin Blanc, with individual parcels vinified separately to highlight the differences in soil and site. 

In the cellar Pascal works with indigenous yeasts and a light hand, using concrete, old oak and amphora depending on the wine, with minimal additions and little intervention throughout élevage. The wines capture what makes Chinon so compelling – Cabernet Franc with freshness, perfume and savoury character, ranging from bright, immediately drinkable expressions through to more structured, mineral wines built for the cellar.
