Collection: Savatiano/Sabbatiano
Savatiano, or Sabbatiano as it is also known, is a Greek native, indigenous to the Attica region. It is most commonly blended with Assyrtiko and Rhoditis to make Retsina. However, given its hardy, drought-resistant nature, it is grown throughout Greece and many producers are using it to make single varietal wines.
As a single varietal wine, Savatiano is quite perfumed, with tropical fruit notes of pineapple, guava, and citrus, while retaining a crisp, balanced acidity. A medium-bodied wine that pairs well with barbecued octopus, and freshly grilled white fish.
