Tasting Notes
From an old-vine parcel on clay-limestone soils, Champ Forey shows lifted aromas of pear, quince and citrus blossom, layered with hints of almond and spice. The palate has more weight and texture than the straight Aligoté, yet retains fine acidity and mineral drive. Balanced, savoury and long, it demonstrates the variety’s capacity for depth. - Chris L
“Five Stars. Fuller yellow, with the grape skin and apple character of very good Aligoté. It is worth spending time over the nose. This is just immaculate, with such intensity behind and just a little wood. Seems ready to bottle whereas the 2021 needed 24 months. Very long behind. Effortless! Drink from 2025-2030.” 90-92 points, Jasper Morris MW, Inside Burgundy
Sylvain Pataille is one of Burgundy’s most respected and individualistic vignerons, based in Marsannay at the northern edge of the Côte de Nuits. Trained as an oenologist and consultant before establishing his domaine in 1999, Pataille has become a champion of Marsannay’s terroirs, elevating the reputation of this once-overlooked appellation. Today he farms around 15 hectares spread across a mosaic of lieux-dits, working with Pinot Noir, Chardonnay, and a celebrated collection of old-vine Aligoté parcels.
Farming is certified organic and guided by biodynamic principles, with an emphasis on biodiversity and healthy soils. In the cellar, Pataille works with wild ferments, minimal sulphur, gentle extraction and long élevage, often in older oak, to highlight texture and terroir transparency. His range runs from crystalline, age-worthy Aligotés to structured and perfumed Marsannay reds, culminating in the flagship L’Ancestrale.
Pataille’s wines are known for their energy, purity and soulful expression of place—wines that combine the finesse of the Côte de Nuits with the freshness and authenticity of Marsannay. He has become a reference point not only for the appellation but for thoughtful, terroir-driven winemaking across Burgundy.
