100% destemmed and open fermented and left on skins between 15-26 days. Aged independently in a mix of old French hogsheads and barriques until being blended just prior to bottling. Super aromatic bright red cherry fruit to the fore with more savoury herb characters evolving with time. Gentle tannins build with more air to an ethereal, delicate yet complex wine. - Distributor Note

Having made wine fo the last few year, David shows mind-boggling intuition with his 'less-is-more' mantra. With fruit sourced from the Adelaide Hills and Wrattonbully, AOW wines show restraint in all the right places - both in skin contact time, use of oak and extraction of tannin.
