Tasting Notes
A proper field blend, red and white grapes from two organically farmed vineyards in Spain all fermented together in the one go. It leans on Tinto Fino and Valenciano with a splash of Garnacha, plus a handful of whites for lift, around a third done as whole bunches and the rest destemmed by hand to keep the berries whole. From there it settled into 500L puncheons for a good sixteen months, completely undisturbed, and you can feel that in how seamless and complete it tastes. - Pete L
