Something a little different to finish on, this is a Pineau des Charentes, the classic Cognac aperitif made by fortifying fresh grape must with cognac before it can ferment. Bourgoin's version is a cracker, fresh, light and elegant where a lot of pineau can be heavy and sweet. It's built around a lovely note of apricot, with balanced acidity and a distinctive silky smooth texture. Aged in casks that once held very old cognac and bottled with nothing added, it's delicious well chilled as an aperitif or after dinner. - Pete L
Bourgoin is a family-run Cognac estate based in the tiny village of Tarsac, near Saint-Saturnin in the Charente. Today it is led by Frédéric Bourgoin, who has taken a distinctly vigneron approach to Cognac, producing spirits that are about vineyard and terroir rather than the polished house style of the larger producers. The family vineyards are farmed organically, with the eaux-de-vie distilled and matured on the property and bottled without unnecessary manipulation. Alongside their Cognacs, Bourgoin produces an eclectic range of spirits and verjus, often experimenting with different casks, ageing and distillation techniques. These are characterful, individual spirits that offer a very different perspective on Cognac - more like the work of a small grower-producer than a traditional Cognac house.
