55% Pinot Noir, 35% Chardonnay and 10% Pinot Blanc from cult Champagne producer Charles Dufour. Organically farmed grapes from the Cotes du Bar and minimal intervention in the winemaking process. Oxidative handling in the process of this wine adds richness, depth and complexity. While being very dry in style and chalky in texture, there is weight. An absolute beauty. - Chris L
Charles Dufour's family have been based in the Aube region since the 1920s and have been connected to Champagne production ever since. Aube is far from the flashy larger houses of Champagne and closer to Chablis in not only distance terms but also type. The region is becoming synonymous with the Grower Champagne movement as more houses begin to make their mark on the new Champagne landscape.
After taking over from his parents Charles rejuvenated the family holdings converting to biodynamic in 2010 and purified the winemaking by only using wild yeasts, refusing to use enzymes to adjust the wines, zero dosage and ageing in wood on its lees. Charles produces exceptional Champagnes and equally thrilling Coteaux Champenois.
