Green apple and honey notes, lime pith and a clean, stony minerality. There's a white nectarine thing too, giving a bit more weight to it. The palate is crisp and focused, linear in shape, finishing with a crushed oyster shell character. Drink in the sunshine with a dozen fresh oysters. - Pete L
