Château Pavie sits on Saint-Émilion’s southern slope, where steep limestone and clay-limestone terraces give the estate its signature power and depth. The vineyards are planted mainly to Merlot with Cabernet Franc and Cabernet Sauvignon adding lift and structure, and the site’s warm exposure consistently delivers fruit of impressive ripeness. In the glass, Pavie leans toward a fuller, more opulent expression of the region, with dark fruit, floral tones, mineral drive and a confident framework of tannin. It has a long track record of producing wines built for serious ageing, yet the best examples still show a sense of precision that reflects the estate’s hillside origins. - Pete L
