Here's something properly special from Comando G, the cult Gredos duo behind some of Spain's most sought-after wines. Camino del Pilar is their take on Albillo, a grape they rate highly for ageing, farmed up in the Sierra de Gredos and raised under a veil of flor in the manner of Sherry and the Jura. That flor works its magic, giving the wine a linear, mineral, spicy character with a wonderfully oily texture and glossy palate. It's savoury, distinctive and made to blow minds.
