Aromas of white peach, citrus blossom, mille-feuille and toasted nuts. The palate is quite savoury with salty lime freshness, but the weight and texture builds with time and you’ll start to see the trademark juicy stone fruit flavours. It’s tightly-coiled and as usual with be fantastic now with some air, or a few years in the cellar if you can wait! - Producer Note
Dappled is the small Yarra Valley project of winemaker Shaun Crinion, built around carefully sourced fruit from vineyards across the region. After working vintages in Australia and overseas, Shaun established Dappled in 2009, initially making tiny quantities while working at some of the Yarra’s leading wineries.
The focus is firmly on site, working closely with growers and favouring vineyards with mature vines, interesting soils and cooler exposures. Chardonnay and Pinot Noir sit at the heart of Dappled, alongside small amounts of other varieties, with each wine made to reflect where it comes from rather than a particular house style.
In the winery the approach is deliberately gentle – wild fermentation, thoughtful use of whole bunches and oak, and minimal intervention wherever possible. The wines have a lovely sense of restraint and detail, combining the freshness and perfume of the Yarra with texture, savouriness and plenty of character.
