Tasting Notes

From old vines rooted in the limestone soils around Chablis, Alice and Olivier De Moor craft one of the benchmark examples of Aligoté in Burgundy. This is a wine that takes the humble local grape and lifts it to a level of striking purity and character.

The aromatics are immediately inviting: citrus blossom, crisp pear, and green apple, laced with subtle notes of fresh herbs and chalk. On the palate, it’s electric – taut and linear, with a fine thread of acidity that drives through flavours of lemon zest, quince, and a savoury mineral edge. A gentle creaminess from lees ageing adds texture, balancing the racy freshness beautifully.

Alice and Olivier De Moor have, over the last three decades, established themselves as one of the most respected grower-producers in Chablis and the wider Bourgogne. Working from their home base in Courgis, just outside the village of Chablis, they cultivate a small patchwork of organically farmed vineyards with an almost obsessive commitment to authenticity and purity.

The De Moors were early adopters of organic viticulture in the region, beginning their conversion in the late 1980s when such practices were considered eccentric at best. Today their vineyards – spread across Chablis, Chitry, and the lesser-known Saint-Bris appellation – are farmed without chemicals, with soils kept alive and expressive of their distinctive Kimmeridgian and Portlandian limestone origins.

In the cellar, their approach is one of restraint and patience. Indigenous yeasts, minimal intervention, and élevage in neutral oak or stainless steel allow the wines to express unvarnished clarity and texture. Long fermentations and extended lees contact yield whites that balance crystalline minerality with savoury depth, and reds (from Pinot Noir and other Burgundian varieties) that show delicate perfume and vitality.

The De Moors’ reputation rests on their unwavering pursuit of wines that speak of place and season, rather than technique or fashion. Bottlings like their Chablis “Bel Air et Clardy,” the Aligoté, and the Sauvignon de Saint-Bris are now cult favourites, treasured for their energy, precision, and remarkable ability to age.

In short: these are wines of honesty and character, crafted by two vignerons whose guiding philosophy is to let nature do the talking.
