Tasting Notes
Shay’s Flat vineyard sits in the Landsborough Valley in the western part of the Pyrenees wine region. The vineyard is on an eastern facing ridge and lies in an amphitheatre (350m elevation) with a magnificent vista down the valley. The sub region of the Landsborough Valley is a quintessential Australian setting. With lots of bush/scrub mixed in with the wheat fields, sheep and vineyards. The soil is a mix of red clay with siltstone, quartz and schist mixed throughout.
Certified organic and managed by Corey Hope, Shay’s Flat is one of those vineyards that has a special positive vitality which we feel very fortunate to be working with.
Hand picked and all de-stemmed. Fermentation commenced slowly and the grapes remained on skins for 3 weeks, with a similar extraction approach as the Pinot Noir. Once pressed the wine was transferred to a mixture of French Oak barriques for barrel aging with no new oak The wine stayed in barrel for 12 months being topped regularly before being racked to tank with a sulphur dioxide addition. Here it stays for 4 months to settle and clarify in the cold winter months prior to bottling
Ruby red in colour and smells of raspberries, licorice, baking spices, game meat and dried flowers. It is tight and svelte with a refreshing fruity energy running through despite being a more full bodied style. It goes from blue to red fruits in the mouth supported all the way with a sheath of fine tannin. - Winery Note.
Dilworth & Allain is a small-scale, artisanal winery founded in 2017 by winemaker Chris Dilworth and artist-winemaker Loïque Allain. Based in Leonards Hill near Daylesford, Victoria, they work with vineyards across the Macedon Ranges—farming two sites themselves—and produce exceptionally low volumes, each wine crafted with a strong sense of place.
Chris brings deep experience from winemaking stints in Australia and Burgundy, while Loïque’s background in fine arts informs both the creative approach to winemaking and the distinctive hand-designed labels. Together, they have developed a reputation for thoughtful, terroir-focused wines that combine precision with artistry.
Their range includes expressive Riesling (often made with skin contact), textural Chardonnay from old vines, and elegant Pinot Noir from the Romsey area. All are made with minimal intervention, native yeasts, and only sulphur as an additive, reflecting a philosophy of purity and authenticity.
In just a few years, Dilworth & Allain have established themselves as one of the Macedon Ranges’ most exciting new producers, celebrated for wines of energy, clarity and quiet intensity.
