Clay buried in the ground does something to a white wine that a steel tank never will. Do Re Mi work entirely in qvevri, the way Georgia has gone about it for thousands of years, and what comes out here is full bodied, openly oxidative and carrying real tannic grip. Tangerine and baked apple with black pepper and black tea leaf underneath. Serve it just under room temperature and give it a challenge with cuisines like Korean or Indian... Wines like these love spice. - Pete L
