Tasting Notes
A cracking pure take on Savagnin, this. It's off 70 year old vines on limestone and clay, wild fermented and aged eighteen months in neutral oak in the ouillé style, meaning the barrels are kept topped up so you get all the freshness and none of the nutty, oxidative side Jura is also known for. The result is precise and persistent, all preserved citrus, alpine herbs and crushed stone. Proper old-vine Savagnin, and about as clean as it gets. - Aaron C
Peggy & Jean-Pascal Buronfosse moved to J.F. Ganevat’s village La Combe de Rotalier in 1999 after growing tired of life in the city. They wanted to live in a countryside setting where they could grow their own vegetables, raise chickens, rabbits, and pigs. Originally, their dream was to have a farm, but viticulture gradually drew their curiosity. They realised that they wanted to grow both their food and their drink. After acquiring several small vineyard parcels, they began working with trial and error, as well as gaining guidance from Monsieur Ganevat. Today they have certainly found their way.
