Tasting Notes
70-year-old Chardonnay vines, on dry scree with very deep Lias gray marl. The vineyard has been in conversion to organics since Cedric took over. Manual harvest and fermentation in stainless steel with upbringing on fine lees in Burgundy barrels. Very mineral and typical of Jura chardonnay with meadow, slight ox and saline tang.
