
Tasting Notes
Hand-harvested. Partially destemmed (50%) and lightly crushed, then fermented on indigenous yeasts in temperature-controlled cement tanks. Aged in cement tank (35%) and older foudre (65%), from two to five years old. Wine is moved via gravity; bottled unfined and unfiltered, with minimal sulfites added. Aromas of black fruits, pink and white peppers; flavours of blackberries and blue plums. Unctuous texture with silky tannins. - Importer Note
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
