Tasting Notes
This wine is produced with chenin blanc grapes on clayish silicate soil, hand harvested, this wine ferments two months in barrels. It matures in the tank with it's fine lees until Spring. The wine develops a good balance between acidity and a light residual sugar which gives a natural fresh flavour. The soil gives a mineral taste of flint stone which will increase with time. It can be characterised by it's yellow, shining colour and it's apple, quince and citrus fruit aromas. - Winery Note
