The Dr Edge Blanc de Noirs Brut Nature is a premium, single-vineyard vintage sparkling wine crafted by Peter Dredge in the Tamar Valley. Made from Pinot Noir with 4% Pinot Meunier, it undergoes traditional-method fermentation and spends five years on lees before being disgorged with zero dosage. The nose presents notes of Madeira cake, apple, and strawberry blossom. The palate balances bracing acidity with a rich, layered texture of peach, umami, and structured white tea, finishing with a vibrant burst of cranberry and saline minerality. - Chris L
