The Dr Edge Brut Nature is a high-energy, bone-dry Tasmanian sparkling wine crafted by Peter Dredge using traditional-method techniques. Sourced from cool-climate Tamar Valley Pinot Noir, Chardonnay, and Pinot Meunier, it spends two years on lees and is disgorged with zero sugar dosage for a razor-sharp, Grower Champagne style. It shows a piercing profile of crunchy green apple, lemon zest, and subtle brioche, backed by a chalky, saline texture. - Chris L
