Essentielle 2022 by Élise Dechannes is a pure Pinot Noir Champagne showing a pale straw hue with subtle pink reflections. The nose is bright with citrus and orange zest, while the palate carries a lively, tangy drive balanced by a gentle, rounded finish. - Pete L
The nose is initially quite shy but shows layers of wild strawberries, raspberry and cranberry. The palate is extremely fine-boned and effervescent - a little tart on opening but softens up quickly. Some nice herbs come out on the nose as well with some exposure to air and the palate becomes more rounded and plush. Great stuff. - Aaron C.
Elise Dechannes produces her Champagnes in Les Riceys, located in the southernmost part of the Aube region, renowned for its Pinot Noir still rosé called Rosé des Riceys. She follows organic practices and embraces biodynamic methods, with occasional exceptions such as certain years when she refrains from using copper or sulfur on the vines. Similar to the neighbouring Chablis appellation, the soil features consist of Kimmeridgian marl and clay soils.
Elise employs various vinification and aging techniques, including stainless steel, oak, sandstone, and clay amphoras. Most of her Champagnes are made without dosage. Her predominantly Pinot Noir-based wines offer a wide range of flavours from exceptionally ethereal and fruity to more savoury and indulgent.
