
Tasting Notes
Love at first sight right here. This is coming from the Canary Islands side of the Envinate label and is 100% Listan Blanco AKA Palomino, which you typically see used in Jerez to make Sherry. Unsurprisingly this wine shares some similarities with the wines of that region as a portion of the wine is aged under flor yeast which adds layers of nutty character which compliments the notes of preserved lemon/citrus. The thing that hooked me though was the flinty and slightly smokey reduction that leaps out of the glass and carries onto the palate. This is really my style of wine. - Pete L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
