
Tasting Notes
Palo Blanco comes from gnarled old vines in Orotava, their twisted “Trenzado” braids spilling across the vineyard like ancient ropes. These centenarian vines give the wine both gravitas and energy. In the glass it feels waxy and textural, yet driven by piercing acidity that brings to mind good Chenin. The nose, though, speaks clearly of Listán Blanco—subtle citrus, smoke, and a stony edge. Ageing in large old foudres shapes it without marking it, leaving a wine that’s both grounded and electric, a true reflection of its volcanic home. - Pete L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
