
Tasting Notes
Grafted over original Sauvignon Blanc plantings. Very well suited to the growing conditions of the western fringes of the Yarra Valley. 100% whole bunch ferment for 2 weeks with no plunging or pumping over. Pressed to stainless to complete ferment, followed by ageing in old puncheon and hogshead for 6 months. Racked once and bottled without fining or filtration. Herbal, graphite aromas, sappy tannin and preserved cherry. - Winemaker Note
