Tasting Notes
Syme on Yarra is a mixed farming property in Gruyere, in the foothills of the Upper Yarra. It consists of cattle, vineyard and native forest. The vineyard is overlooked by Stuart Proud, and is farmed to intensive biological principles. MV6 pinot noir on own roots from a steep north facing block, 100% whole bunch ferment for 2 weeks with no plunging or pumping over. Pressed to stainless to complete ferment, followed by ageing in old puncheon and hogshead for 6 months. Racked once and bottled without fining or filtration. Lighter loose knit expression of Pinot Noir, roasting spice, mushroom, red berries & fine tannin. - Winemaker Note
