Tasting Notes
This is Eric's baby (declassified) Vin Jaune. Made oxidatively and 'sous voile' (under flor), it's an incredibly layered and complex wine. Nutty, bruised apple and saline aromas eminate from the glass. The palate is rich and full with savoury spice, autolytic leesy characters, rancio nuttiness and nice acidity to balance. Complex, intricate and utterly delicious. - Felix G
