Tasting Notes
Three vineyards picked at three different times, the Merricks North and Talland Hill fruit in early to hold onto the acidity and the Bayview block up the hill left hanging longer for riper, bolder flavour. Whole bunch pressed on a gentle champagne cycle, then into barrel with full solids and almost no sulphur for a wild ferment and a full malo through to the following summer. Jasmine and white flowers over orchard fruit with the barrel sitting behind, plush through the middle and clean on the finish. - Pete L
