Qvevri usually means orange wine, so a white that spends its whole life in clay without ever seeing skins is a rarer thing. Gaioz is one of Georgia's natural wine pioneers, working out of Baghdati in Imereti in the west of the country, and his Tsitska says far more about the site than it does about fruit. Taut, racy and high in acid with a citrus curd character and electric length. Tasted blind you would call it old world but be shocked it's Georgian when revealed. - Pete L
