A very rare cuvee only produced in exceptional years. 100% Chardonnay from a tiny plot called Les Chenes that is harvested at full maturity. The wine is barrel aged for just under a year and then aged in bottle for a further four years. It is deep, decadent and powerful and worthy of ageing. - Pete L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
