The quality of the Pinot Noir really shines through here as the wine is zero dosage so the fruit is picked at full maturity packing in layers of red fruit that get a boost from its time on lees in barrel, adding a toasty, nutty, character with hints of oxidative character. - Pete L
The Rémy family's Champagne history began in 1829 in Bouzy, Montagne de Reims. After WWII, they transitioned from grape selling to winemaking. Georges Rémy continued this tradition after acquiring a vineyard in 2011, launching the third generation. Today, he manages 4.7 hectares of organic vineyards, collaborating with other growers to enhance techniques in the vineyards. Georges produces various cuvées using separate parcel vinification. His grapes are harvested at optimal maturity, gently pressed, and aged in barrels for 17-20 months, with varying dosages.
