Tasting Notes
This 100% Cannonau comes from 85yo vines situated in Mamoiada, an area often considered as a grand cru site for Cannonau in Sardinia. Giovanni works a small parcel of land his wife inherited and produces a gorgeous mid weight style of wine. It's all aged in large oak foudre and is made in a very hands off style. Giovanni says the wine is best served with a little chill which adds another layer of freshness to the wine. These wines are built to age but also can be enjoyed in their youth with a good decant. - Pete L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
