The Pouilly-Fuissé is unusual, in that half of the fruit derives from schist soils and the other half from the clay-limestone terroirs that are more commonly associated with the appellation. "Most growers sell their grapes from schist to the négociants, but I like the fragrance it brings to the wine—if it's picked in a timely fashion," he observes. Expect powerful aromas of citrus zest, pear and peach, as well as pretty top notes of spring blossom and pastry cream.
