Tasting Notes
A field blend of Sauvignon, Chenin, Sylvaner and Noual (a local variety of the lot). A very small portion of the grapes had 2 days maceration. Slowly pressed over 8 hours in a pneumatic press. Fermentation in old Alsatian barrel, followed by elevaged for 18 months in an old Alsatian foudre.
A bright profile with aromas of flowers, citrus and spices. Precise and long with salinity interweaving. The palate displays pomaceous fruit fullness and structure. Vibrant and a beautiful mineral finish. - Importer Note
