A new wine for Tim and a real step up from the Collines. More orchard than stone fruit, quince and white florals. The nose makes you think it will be a powerful wine however it's a much more restrained mineral expression of Adelaide Hills Chardonnay. - Pete L
Les Fruits is the winemaking project of Tim Stock, using naturally and biodynamically farmed grapes sourced from the Adelaide Hills and Barossa Valley. Produced in a shed in the Basket Range, the winemaking is simple and traditional. All wines are matured on lees in old French oak barrels of varying sizes, with nothing added apart from minimal sulphur at racking and/or bottling. All of the wines are bottled unfined and unfiltered.
