Probably the biggest of Tim's wines, it's laden with plenty of dark berry fruit, plum notes, and dark chocolate hints. Despite its richness, the wine still maintains freshness and vibrancy, and slips along nicely on a bed of fine-grained tannins. It's silky and fine with everything in its right place. - Felix G
Les Fruits is the winemaking project of Tim Stock, using naturally and biodynamically farmed grapes sourced from the Adelaide Hills and Barossa Valley. Produced in a shed in the Basket Range, the winemaking is simple and traditional. All wines are matured on lees in old French oak barrels of varying sizes, with nothing added apart from minimal sulphur at racking and/or bottling. All of the wines are bottled unfined and unfiltered.
