Tasting Notes
A Pinot Noir blending fruit from Ironbank and the higher elevation Ashton site, with a small portion of whole bunch and fermentation handled to keep the wine open and expressive. Matured for ten months in older hogsheads. The wine shows a savoury aromatic profile with dark cherry, earth and spice, alongside a gentle lift of rose perfume. The palate is textured and balanced, combining darker and red fruit with fresh acidity that carries the wine through to a long, finely structured finish. - Pete L
Les Fruits is the winemaking project of Tim Stock, using organically and biodynamically farmed grapes sourced from the Adelaide Hills and Barossa Valley. Produced in a shed in the Basket Range, the winemaking is simple and minimal. All wines are matured on lees in old French oak barrels of varying sizes, with nothing added apart from minimal sulphur at racking and/or bottling. All of the wines are bottled unfined and unfiltered.
