Tasting Notes
This is one of the most exciting Aussie natural wines I've tried lately. I've always been a fan of oxidative white wines, but usually I see them made with Chardonnay or Savignin. This Sic wine is made with the sick variety Sauvignon Blanc and it couldn't be more interesting as well as polarising. Not your average Sauv Blanc and all the better for it. Les Fruits is the winemaking project of Tim Stock, using naturally and biodynamically farmed grapes sourced from the Adelaide Hills and Barossa Valley. Produced in a shed in the Basket Range, the winemaking is simple and traditional. All wines are matured on lees in old French oak barrels of varying sizes, with nothing added apart from minimal sulphur at racking and/or bottling. All of the wines are bottled unfined and unfiltered.
