A lighter Pinot than Collines, but no less layered and complex. In fact, perhaps more so? It's got plenty of generosity, but shows restraint and elegance too. Red fruits, warm spice, and a whisper of savoury earthiness and forest floor, all carried along by a fine structure and clean acidity. Good stuff and will develop nicely over the next few years in a good cellar. - Felix G
Les Fruits is the winemaking project of Tim Stock, using naturally and biodynamically farmed grapes sourced from the Adelaide Hills and Barossa Valley. Produced in a shed in the Basket Range, the winemaking is simple and traditional. All wines are matured on lees in old French oak barrels of varying sizes, with nothing added apart from minimal sulphur at racking and/or bottling. All of the wines are bottled unfined and unfiltered.
